I took this photo last January at Castillo de San Marcos in St Augustine, FL. I overheard a Park Ranger telling a few others with point & shoot cameras (or cell phones) how to get the best shot of the cannon going off. Burst mode? No way; one shot!
Here's the trick: press the shutter half way (auto-focus), then wait for the explosion. When the cannon goes off, you'll jump and 'accidentally' press the shutter the rest of the way. If you rely on your brain and motor skills to catch the photo, you'll probably miss the split second explosion.
